Aam ka Bharwan Achaar
Ingredients
- Quantity: 3 kgs. (Appx.)
- 650 gms. black mustard (sarson) oil
- 100 gms. aniseed (saunf)
- 100 gms. salt
- 100 gms. fenugreek seeds (methidana)
- 50 gms. red chilli (lal mirch) coarsely ground
- 40 gms. turmeric (haldi) powder
- 2 kgs. desi unripe mangoes
- 4 gms. asafoetida (heeng)
- 10 gms. black pepper (kali mirch sabut)
Method
Wash mangoes with clean water and wipe them. Spread them on a sheet of cloth.
Chop them with a sarauta in such a way that the segments are loosely held together at the bottom. Remove the stones (guthli). Coarsely grind saunf.
Put 200 gms. oil in a bowl. Mix saunf, methidana, haldi, heeng, lal mirch, namak and kali mirch.
Fill the masala stuffing in all the cut mangoes in equal quantity. Put in a martban (glass jar) alongwith guthlies. Keep the martban under the Sun. Pour the remaining oil.
This achaar will be ready for use after two weeks. It can be preserved for a long period.
Always use a spoon to bring the achaar out of the jar. The use of hands for this purpose will spoil the achaar.
