Aam Ka Meetha Achaar

Ingredients

  • Quantity: 2.25 kgs. (Appx.)
  • 1 kg. mangoes (aam)
  • 450 gms. sugar
  • 600 ml. vinegar (sirka)
  • 125 gms. currants (kishmish)
  • 20 gms. ginger (adrak)
  • 4 cloves garlic (iahsun)
  • 1 tsp. chilli(mirchi coarsely ground
  • 1 tsp.mustard (rai)
  • 1 tbsp.salt

Method

Peel mangoes. Remove stones. Chop the hard pulp into pieces lengthwise and keep them aside.

Put adrak, Iahsun and two tbsp. sirka in a grinder and make a fine paste.

Put the remaining sirka and sugar in a sauce pan and cook it. Let it come to the boiling point once. Reduce heat and cook it for 10 minutes more. Keep stirring in between.

Add adrak-lahsun paste to the syrup and cook it for 8-10 minutes. Stir all the time.

Add mango pieces, chilli powder, rai, kishmish and salt. Cook for 20-25 minutes, while stirring all the time.

When the syrup thickens, remove the pan from heat. Store in an air-tight jar.

This achaar lasts for many months.
