Aam ka Phankonwala Achaar

 

Ingredients

  • Quantity: 1.5 kgs. (Appx.)
  • 1 kg. desi unripe mangoes
  • 20 gms. turmeric (haldi) powder
  • 50 gms. salt
  • 50 gms. fenugreek seeds (methidana)
  • 50 gms. aniseed (saunf)
  • 25 gms. red chilli (lal mirch) coarsely ground
  • 15 gms. nigella (kalaunji)
  • 0.5 kgs. black mustard oil (sarson ka tel)

Method

Soak mangoes in water for 8-10 hours. Remove and wipe them clean and dry.
Chop mangoes in 4 or 8 segments each, with the help of a sarauta.
Coarsely grind saunf, methidana and kalaunji.
Heat oil and saute saunf, methidana, kalaunji, haldi and mirch gently. Add salt.
Add mango segments. Switch off the heat. Toss mangoes with masala and shake well.
Keep aside to cool and then fill in a martban.
Keep the martban under the Sun.
Shake the martban once a day to mix the mango pieces together.
Use after 12-15 days.
