Aam Ka Sirkewala Achaar

  • Ingredients
  • Quantity: 3 kgs. (Appx.)
  • 2 kgs. mangoes
  • 200 gms. sugar
  • 400 gms. vinegar (sirka)
  • 10 cloves (laung)
  • 5 cinnamon (dalchini) pieces ground
  • 50 gms. spinach (paaiak)
  • 20 gms. dry ginger (sonth) ground
  • 500 gms. sirka extra

Method

Wash mangoes and wipe them well. Chop them into four pieces each.
Put the pieces in a big steel bowl. Sprinkle salt all over and rub it well.
Remove the mango pieces after 30 hours and spread them on a sheet of cloth under the Sun.
When the mango pieces are dried, put them in a martban.
Keep the martban under the Sun for 8-10 days and shake it twice daily.
Pour the extra sirka in the martban and taste the ready achaar.
