Amle Ka Murabba
Ingredients
Quantity: 7.25 kgs. (Appx.)
- 2kgs. amla
- 25gms. lime (choona)
- 5kgs. good quality white sugar
- A pinch of saffron (kesar)
- 0.5 tsp. black pepper (kali mirch)
- 1tsp. cardamom (ilaichee) powder
Method
Wash amlas in clean water and pierce them with a fork.
Dissolve lime in water and soak amlas in it for five days.
Remove amlas from the lime water and wash them under running water. Spread them on a sheet of cloth to dry up thoroughly.
Mix 7 glasses of water with sugar. Prepare syrup and put amlas in it.
When the syrup thickens, add kesar, kali mirch and ilaichee.
When amlas are tender then switch off the heat.
