Baigan – Tamatar Ka Achaar

Ingredients

  • Quantity: 1.5 kgs. (Appx.)
  • 500 gms. tirinjals (baigan)
  • 1 tsp. slit
  • 2tbsp. ghee
  • 200 gms. onions chopped
  • 3 cloves garlic crushed
  • 2 fresh red chillies chopped
  • 500 gms. tomatoes chopped
  • 2 tsp. sugar
  • 1 tsp. garam masala powder
  • 1 tsp. coriander (dhania) ground
  • 0.5 tsp. chilli ground
  • 1 tbsp. white vinegar (sirka)
  • 160 ml. water

Method

Peel baigans. Chop them in small pieces. Sprinkle 0.5 of the salt over them and keep aside. Wash them under running water after 20 minutes. Wipe them with a paper and keep aside.

Heat ghee in a large pan. Fry onion, Iahsun, fresh lal mirch till golden brown.

Add chopped baigans. Cook for two minutes, while stirring all the time.

Add the remaining salt, tomatoes, sugar, coriander, sirka and water. Cook for 15 minutes. Stir occasionally.

Cool and store in a refrigerator and serve as and when required.
