Chukandar Ka Khatta-Meetha Achaar

 

Ingredients

Quantity: 2.5 kgs. (Appx.)

  • 1 kg.beetroot (chukander)
  • 500 gms. sugar
  • 1 litre vinegar (sirka)
  • 20 gms. salt
  • 1 tsp. black pepper (kali mirch) ground
  • 1 tsp. ginger (adrak) minced

Method

Wash chukander and chop it lengthwise in thin pieces. Spread the pieces under the Sun for an hour to dry.

Put sirka and sugar in a large sauce pan on heat. Stir continuously.

When sugar is dissolved, add chukander pieces, salt, kali mirch and adrak. Cook on low heat for 5-6 minutes and then switch off the heat.

When cooled, fill in a martban and keep it aside.

You may start consuming this achaar after 5-6 days.
