Gajar Ka Achaar

Ingredients

  • Quantity: 1.5 kgs. (Appx.)
  • 1 kg. carrots (gajar)
  • 8 tbsp. black mustard oil (sarson ka tel)
  • 5 tbsp. mustard (rai) ground
  • 7 tbsp. vinegar (sirka)
  • 5 tbsp. salt
  • 2.5 tbsp. red chilli (lal mirch) ground
  • 2.5 tsp. turmeric (haldi) powder
  • 1 tsp. asafoetida (heeng)

Method

Scrape carrots. Wipe and chop them in small pieces lengthwise.

Heat oil and put haldi and heeng in the oil and keep it aside to cool.

Put gajar pieces in a glass jar. Add salt, lal mirch, sirka and rai. Mix well all together.

Add oil. Mix, cover and keep aside.

Use after two days. This pickle can be prepared even without vinegar. Absence of vinegar doesn’t affect the taste.

Hari mirch pickles can also be prepared the same way.
