Gajar Ka Murabba

 

Ingredients

Quantity : 2.25 kgs. (Appx.)

  • 1 kg. carrots (gajar)
  • 1 kg. sugar
  • 1 lemon
  • 2 glasses of water

Method

Scrape carrots. Cut them a little from both ends. Pierce them with a fork.

Boil carrots in hot water for 15 minutes. Remove and keep under the Sun for an hour to dry.

Mix 2 glasses of water with sugar and prepare its syrup (chashni).

When sugar is dissolved, add gajar. Cook till the syrup thickens.

Sprinkle lemon juice on the cooked carrots and remove after 5 minutes.

Cool and store in a martban.
