Gajar Ki Kanji

 

Ingredients

Quantity: 4.5 litres (Appx.)

  • 2 kgs. black carrots (kali gajar)
  • 200 gms. salt
  • 50 gms. mustard (rai)
  • 50c gms. red chilli (lal mirch) coarsely ground
  • 8 glasses of water

Method

Scrape carrots, wash and chop lengthwise.

Coarsely grind rai and mix with salt and lal mirch.

Put gajar pieces in an earthen jar or glass jar and add all the masalas.

Add 8 glasses of water. Cover and keep the jar under the Sun.

Use after 5-7 days.
