Gobhi- Gajar- Matar Ka Achaar

Ingredients

  • Quantity: 1 kgs. (Appx.)
  • 250 gms. black mustard (sarson) oil
  • 500 gms. cauliflower (gobhi) pieces
  • 100 gms. peas (hari matar)
  • 200 gms. carrots (gajar) chopped lengthwise
  • 1tbsp. cumin seeds (jeera)
  • 1small onion chopped
  • 1tsp. coriander (dhania) ground
  • 1tsp. turmeric (haldi) powder
  • 1tsp. chilli (mirch) ground
  • 1.75 tsp. salt
  • 1tsp. mustard (rai)
  • 0.5 cup vinegar (sirka)

Method

Wash gobhi, gajar and matar with clean water. Wipe with a clean piece of cloth and put in the Sun for two hours.

Heat oil in a kadahi and add rai and jeera.

Add vegetables after half a minute.

When oil cools down, add dhania, haldi powder, mirch, salt and sirka. Mix well together, fill in a jar and keep it under the Sun.

Keep the jar under the Sun for 4-5 days and shake it daily.

This achaar does not last long. So prepare only as much quantity as would be sufficient for 8-10 days.
