khubani Ki Chutney
Ingredients
Quantity: 1.25 kgs. (Appx.)
- 500 gms. apricot (khubani)
- 300 ml. vinegar (sirka)
- 350 gms. sugar
- 50 gms. ginger (adrak) ground
- 1 .75tsp. chilli
- 0.5 tsp. salt
Method
Put khubani in a sauce pan. Fill the pan with water so that khubanis get immersed. Leave the pan overnight.
In the morning. Cook the khubanis till soft. Remove and cool.
Grind the khubanis to a fine paste.
Put sirka, sugar, adrak, mirch and salt in a separate sauce pan and put it on low heat.
When sugar is dissolved, increase the flame. Stir all the time.
When the syrup thickens, add khubanis. Cook for 4-5 minutes or till the syrup is thick. Remove from heat.
When cool, store in an air-tight jar and serve.
