Milons Achaar
Ingredients
- Quantity: 1.5 kgs. (Appx.)
- 500 gms. segments of unripe mangoes
- 250 gms. green chillies (hari mirch) chopped
- 250 gms. nimboo phank (lemon segments)
- 250 gms. black mustard oil (sarson ka tel)
- 50 gms. garlic (lahsun) chopped
- 20 gms. asafoetida (heeng)
- 50 gms. turmeric (haldi) powder
- 10 gms. nigella (kalonji)
- 50 gms. aniseed (saunf)
- 25 gms. fenugreek seeds (methidana)
- 60 gms. salt
- 25 gms. red chilli (lal mirch) coarsely ground
Method
Heat oil in a kadahi till it boils. Remove and keep aside to cool.
Mix together in a big martban (jar) mango, lemon, hari mirch, lahsun and salt.
Mix oil well with the achaar.
Keep the martban under the Sun. Shake the martban once or twice during the day.
Use this achaar after 10-12 days. Use a spoon to take out the achaar from the martban.
