Mixed Vegetable Achaar
Ingredients
Quantity: 1.5 kgs. (Appx.)
- 300 gms. potatoes peeled and chopped
- 300 gms. carrots scraped and chopped
- 200 gms. french beans chopped
- 400 gms. cauliflower (phool ghobi) segments
- 50 gms. fresh green chillies
- 50 gms. salt
- 35 gms. red chilli ground
- 2 tsp. cumin seeds (jeera) large onion chopped
- 2 tsp. rai
- 6 cloves (laung) cup vinegar (sirka)
- 1 cup oil
Method
Wash all the vegetables and keep them under the Sun for an hour.
Heat oil. Fry jeera, onion, salt, lal mirch and laung for 30 seconds. Add potatoes and stir for 2 minutes.
Add all vegetables. Stir for 3 minutes, reduce heat and remove.
Cool and fill in a martban. Keep the martban under the Sun.
Add sirka after 5 days. Shake and turn well to mix them together.
Start consuming after 3-4 days.
