Nimboo ka Meetha Achaar

Ingredients

  • Quantity: 4 kgs. (Appx.)
  • 2 kgs. lemons (nimboo)
  • 1.5 kgs. sugar
  • 40 gms. kala namak
  • 2 nutmeg (jaiphal)
  • 4 gms. mace (javitri)
  • 4 gms. bari peepal
  • 10 gms. cumin seeds (jeera)
  • 40 gms. vinegar (sirka)
  • 80 gms. black pepper (kali mirch)
  • 150 gms. sendha namak
  • 40 gms. cloves (laung)
  • 4 gms. bay leaves (tej patta)
  • 4 gms. cinnamon (daichini)
  • 20 gms. dry ginger (sonth)
  • 200 gms. ginger (adrak)
  • 40 gms. brown cardamom (bari ilaichee)

Method

Wash and wipe the nimboos and keep them in the Sun for some time to dry. Slit them crosswise and make a gap.

Wash and peel adrak and chop it in rings.

Grind the masala coarsely and fill in the lemons in equal quantity. Put the stuffed lemons in a martban.

Sprinkle sugar and adrak ka laccha on the lemons and shake the martban well. Cover and keep under the Sun. Shake the martban daily.

Use this achaar after 15-20 days.
