Nimboo ka Meetha Achaar
Ingredients
- Quantity: 4 kgs. (Appx.)
- 2 kgs. lemons (nimboo)
- 1.5 kgs. sugar
- 40 gms. kala namak
- 2 nutmeg (jaiphal)
- 4 gms. mace (javitri)
- 4 gms. bari peepal
- 10 gms. cumin seeds (jeera)
- 40 gms. vinegar (sirka)
- 80 gms. black pepper (kali mirch)
- 150 gms. sendha namak
- 40 gms. cloves (laung)
- 4 gms. bay leaves (tej patta)
- 4 gms. cinnamon (daichini)
- 20 gms. dry ginger (sonth)
- 200 gms. ginger (adrak)
- 40 gms. brown cardamom (bari ilaichee)
Method
Wash and wipe the nimboos and keep them in the Sun for some time to dry. Slit them crosswise and make a gap.
Wash and peel adrak and chop it in rings.
Grind the masala coarsely and fill in the lemons in equal quantity. Put the stuffed lemons in a martban.
Sprinkle sugar and adrak ka laccha on the lemons and shake the martban well. Cover and keep under the Sun. Shake the martban daily.
Use this achaar after 15-20 days.
