Nimboo Ka Sirkewala Meetha Achaar

Ingredients

  • Quantity: 1.5 kgs. (Appx.)
  • 1 kg. lemons (nimboo)
  • 100 gms. salt
  • 200 gms. jaggery (gur)
  • 1 cup vinegar (sirka)
  • 2 tbsp. red chilli (lal mirch) powder

Method

Wash and wipe lemons. Dry them in the Sun for a while. Cut in 8 pieces each.

Rub salt on them and put them in a martban.

Put all the nimboo pieces in a pan after 10-12 hours. Add 3 glasses of water. Place on to the heat. Cook till lemons soften. Discard water.

Boil sirka, gur and mirch powder in a sauce pan and add nimboo pieces.

When the syrup thickens, remove from heat.

Cool and store it in an air-tight container. Keep aside for 8-10 days. Shake the jar daily to turn and toss the pickle.
