Tamatar ki Chutney
Ingredients
Quantity: 1.5 kgs. (Appx.)
- 1 kg. tomatoes ripe and firm
- 4 cloves garlic (lahsun)
- 1 tsp. red chilli ground
- 1 tsp. turmeric (haldi) powder
- 1 tsp. mustard (rai)
- 2 tsp. cumin seeds
- 4 tbsp. sugar
- 8 green chillies
- 2 cups vinegar (sirka)
- 0.75 cup black mustard oil (sarson ka tel)
- 2.5 tsp. salt
Method
Dip tomatoes in boiling water for a minute and remove. Peel and whip thoroughly.
Coursely grind rai and jeera.
Heat oil. Add lahsun, hari mirch, rai and jeera.
Cook the whipped tomatoes after 10 seconds.
After 3 minutes add sirka, sugar, salf and all the other masalas. Cook, while stirring all the time.
When oil separates from the chutney, switch off the heat.
Cool and store in a refrigerator.
This chutney can be preserved for a few days only.
